Chapter 4 - THE IMPROVISATION

"Leo, we have no food!" Margaret cried out. "The menu is ruined!"
Leo stripped off his apron and grabbed his coat. "The luxury ingredients are ruined. But cooking isn't about caviar, Ms. Hale. It's about heart. Give me the company card. I need one hour at the farmer's market down the street."
Margaret looked into the eyes of the eighteen-year-old boy. She saw no fear, only absolute determination. She handed him the black Amex. "Go."
Leo sprinted down the street. He didn't buy truffles or imported wagyu. He bought rustic, beautiful, humble ingredients. Heirloom tomatoes, fresh local cod, wild mushrooms, root vegetables, and fresh herbs. He returned to the kitchen with crates of produce and a wild fire in his eyes.
"Listen to me!" Leo shouted to the panicked line cooks. "We are throwing out the menu. We are going back to the roots of French country cooking. It's about flavor, not price tags!"

For the next four hours, Leo moved like a maestro. He showed the line cooks how to braise the root vegetables in local cider, how to sear the cod with a brown butter herb crust, and how to turn the wild mushrooms into a rich, velvety risotto.
When the food critic arrived at 8:00 PM, the kitchen was a well-oiled machine, led entirely by the boy who used to scrape the plates.
